Robert Parker's the Wine Advocate 97 - Aromas of red berries, orange rind, dried flowers, warm brioche and spices introduce the 2007 Brut Rosé Cuvée Elisabeth, one of the highlights of this tasting chez Billecart. It's full-bodied, broad and vinous, with an enveloping attack and a bright underlying spice of acidity, revealing plenty of chalky dry extract and concentration, concluding with a long and precise finish. Despite the style of the vintage and the fact that malolactic fermentation was largely blocked, this is quite a textural, powerful wine.

The presence of an ancestral savoir-faire is recognised through the art of assemblage and rigorous selection from an exceptional harvest. This great wine, with its extreme finesse, is a sign of the delicate personality of its textures and flavours. Created in 1988 as a tribute to the House’s co-founder Elisabeth Salmon, this cuvée distinguishes itself through its sparkle and refined purity of grandeur and unique character. This great, rare and sought after wine, offers the subtle signature of our top Pinot Noir and Chardonnay terroirs.

"Cuvée Elizabeth" Rosé Champagne lives up to its lofty reputation as the best rosé in the world. It is composed of even parts Chardonnay and Pinot Noir, but it is the red wine that is added (about 9%) that puts this wine in a class of its own. The red Pinot Noir is all from the 1er Cru of Mareuil, in fact from one 80-year-old plot called the Valofroy. This ultimately elegant Champagne has kaleidoscopic complexity with everything inside from white flowers to subtle hazelnuts. The Volnay-like character of the red wine is in the background now, but for the patient, this wine will be a treat on the level of any wine in the world!

It is a refreshing sensorial expression of crisp red berries, citrus peel and stone fruits. With the exquisite sensation of a rich and complex aromatic generosity (fresh figs, white peach, almond macarons). A harmonious maturing of flavours (nectarine, cardamom) and an ample and pure character in the mouth unveil the soft spices of tangy mandarin and the persistent flavours of cedar and exotic wood. Ideal when paired with beautiful creamy poultry, in particular poulet de Bresse, langoustines royales and crunchy hibiscus macarons.

Excellent Vintage Rose Champagne with delicate age

We love this wine. It's one of our favorites after Selosse or Salon Champagnes that are 15- 20 years old & properly cellared. Unfortunately we won't be further aging this bottle as it's a gift for my daughter on her 50th birthday. Her favorite champagne is their Brut Rosé; she's never had the Cuvée Elisabeth
