Clare Wine Company Cabernet Sauvignon 2016
The Cabernet Sauvignon fruit to make this wine was sourced from both the Watervale & Polish Hill vineyards. Fruit was picked and then transported to Kaesler in the Barossa Valley for processing. The wine was fermented at a medium temperature (26-30 Degrees centigrade) in stainless steel and transferred to mainly older oak. It was matured in 15% new French oak and the balance 3 and 4 year old French oak barriques for 12 months. This has given a hint of oak but still allowing the fruit to dominate. Notes from the winery.
Very happy with this new 2016 release.. An excellent growing season in Clare has produced the goods!
Classic varietal characters expressed in a delicious easy drinking style … Nuances of cedar wood with liquorice and dried fruit aromas lead to flavours of cherries, blackcurrants, and a touch of mint all framed by gentle food-friendly tannins … this is the perfect wine with Italian pasta and lasagne. Enjoy now and over next 5 years.
