Eric Baron took over from his father in 1993. He brought his technical knowledge and kept using the traditional methods in the cidrerie. His cider is aged in oak casks, the apples are dried naturally for 3 months, pressed with a « champagne press ». His organic cider is poured at the French president's table at l'Elysée palace since 1997.
The property is located in the Northern part of the French Britanny peninsula. It covers around 20 acres of several type of apples. The cider house is pretty unique with only oak barrels being used for the fermentation process. This is one of the only one (if not the only one) doing its alcoholic fermentation in oak barrels.This brings more complexity to his cider as well as a very subtle vanilla notes.
Since Eric took over the property, he decided to follow the organic principles. He is Organically certified by Qualité France.
