Grapes: 40% Grenache, 30% Syrah, 30% Carignan
Farming & Terroir: From 30 + year old vines planted on schist soil. Only mineral sulfur (from natural volcanic soils), copper (< 1KG / Ha. / Year) and compost are used in the vineyard. Ploughing and mulching with St. Chamond caterpillar to avoid soil compaction. Vineyards certified organic.
Winemarking: Early pick to retain natural acidity. Hand-picked grapes packed in small 12 kg. harvest crates. Grapes processed by gravity in the cellar. Varying degree of whole cluster vinified with native yeasts. Gentle pump overs allowed for phenolic extraction from the grape skins. 10 month élevage in stainless (90%) and neutral French oak barrels. Bottled unfined and unfiltered with minute sulfur added after FML and bottling. A light on its feet Mediterranean blend with a textured palate and vibrant fruits.
