Wine Spectator 91 - Floral and pear notes make this bubbly distinctive. On the dry side and shimmery, like a Riesling. Elegant and precise, this needs time to gain depth and harmony.

International Wine Cellar 90 - Light gold. Smoky, floral orchard fruits and redcurrant on the perfumed nose. On the palate, sappy red fruit and bitter pear skin flavors are joined by building hints of buttered toast and rose pastille. Finishes chewy and long, with lingering smokiness and a touch of bitter quinine.
This is a blend of crus from all of Pouillon’s holdings, its assemblage mirroring the composition of the estate with 70% pinot noir and 15% each of Chardonnay and Pinot Meunier. 85% is fermented in tank, 15% in oak. This is richly textured and silky, displaying savory aromas and red fruit with lemon grass, apple, and citrus. The fresh acidity balances and elongates the flavors on the finish.
This Champagne makes a fantastic aperitif, but also has the savory Pinot character to marry very well with starters such as smoked salmon, mushroom canapé or even a hot first course of fish.
